Rocky Road Fudge Slice

We all know the traditional chocolate fudge slice. This easy unbaked, throw together slice gets a bit of a revamp when we get rid of the plain chocolate icing and add marshmallows and ganache!

For the Slice
250g Butter
1C Castor Sugar
2 T Cocoa
2 Egg
2 t Vanilla Essence
2 Packets Round wine Biscuits (or other plain biscuits)

 

For the topping
Mini Marshmallows
200g chocolate chips
1/2 C cream

Crush or slice biscuits into small pieces.

Melt butter, sugar and cocoa over a medium heat. Leave on the heat stirring occaisonally until the sugar is melted. This is important so you don’t have sugar granules in your slice.

Stir in cocoa and vanilla. Allow to cool to warm.

Beat in your egg once mixture has cooled a little (to avoid scrambled eggs!).

Lastly, stir in biscuits.

Pour into a line 20cm x 30cm tin.

Before pressing into the tin, sprinkle mini marshamallows over the top, then press down. Place into the fridge to cool.

Melt your chocolate chips with your cream in the microwave, stirring every 30seconds until melted and smooth. Pour over the slice then return to the fridge to set before slicing – I usually leave overnight.
