Cookie Dough Cupcakes


Here is my cookie dough cupcakes recipe I promised you last week!

Just a few points about what I do:
You may notice my various cupcake recipes are very similar.  I don’t think I need to mess with a good recipe, so I stick with a recipe I know will work then tweak as needed.  This same recipe can be vanilla, brown sugar (caramel), with further adjustments it can become chocolate.  It also makes it easy to remember!

The cookie dough filling can either go in after baking , or you can put the balls of dough in the cupcake batter in the cases before baking..  It isn’t a true cookie dough, you can’t bake it and get cookies out of it.  Using icing sugar instead of granulated sugar helps with the smoothness factor.

This is about the only icing I like apart from ganache, so if you haven’t tried it I hope you’re a convert!


120g butter
1/2 C brown sugar
1/2 C white sugar
2 eggs
1 tsp vanilla extract
1 1/2 C Flour
1 1/2 tsp baking powder
1/2 C warm milk
3/4 C choc chips

Cream together butter and sugars.  Add vanilla, then eggs one at a time, beating well between each

Sift in flour and baking powder.  Pour in milk and mix until incorporated.  Fold in choc chips.

Divide between 12 cupcake cases and bake at 180C until they spring back when touched – about 12-15mins.

30g softened butter
2 Tbsp icing sugar
3 Tbsp flour
1/4 tsp vanilla extract
2 Tbsp choc chips

Mix all ingredients together, then divide into 12 small balls.

Core out a hole in the middle of your cupcake and place cookie dough inside.

Note:  this is a cheat cookie dough as it’s not being baked so doesn’t require any raising agent.  You can use any cookie dough if you have spare, but you want it to have NO RAW EGG.


200g butter
2 C icing sugar
1 tsp vanilla extract
1/2 C flour
Chocolate chips to top

Beat butter, icing sugar and vanilla together for a few minutes until light and fluffy.

Add flour and beat again for a further minute or 2.  If you’re icing is a little thick, add a couple of tablespoons of milk

Pipe your icing onto your cupcakes, then top with chocolate chips.
