Snickers Cookies with Salted Caramel Drizzle

We have a great fondness for snickers in this house.  We make snickers doughnuts, snickers cupcakes, snickers cake, and now snickers cookies!

I figured it was time to level up from plain chocolate chip cookies, and snickers are the perfect combination of chocolate, sweet, salty and nutty.

On the other hand, I don’t have a great fondness for cookies made with eggs and baking soda.  I much prefer buttery, soft, more shortbread type cookies than the other kind, so I thought I’d come up with a cookie recipe I love to eat that would be the perfect vehicle for ingesting more snickers.

This is my preference in cookie type but if you have a favourite cookie recipe, of course you can take the general idea and use your own.

 

 

Snickers Cookies with Salted Caramel Drizzle

250g butter
1 tsp vanilla essence
2/3 cup Icing Sugar
2 1/4 C Flour
12 mini sized snickers (or equivalent large bars)
Salted Caramel sauce to finish <– click for recipe

Beat together softened butter, vanilla and icing sugar.  Add flour and mix until nearly combined.

Chop snickers into small pieces (I chopped down the middle, then each of those into 3/4), add to your cookie dough mix and mix until just combined through.

Roll into balls about 4-5cm, then place onto a lined backing tray and press down with a fork.  They won’t spread, so make sure to spread them to the desired thickness – about 1cm thick.

Bake at 180C for about 10-12mins.

Once out of the oven, warm your salted caramel so the consistency is easier to work with, then drizzle or pipe caramel over the top.
